How to smoothly change web hosts with no downtime

My current host has been experiencing a lot of downtime so I want to change hosts, but I am apprehensive about moving because I’ve never had to do it before. I’ve read that in order to minimize downtime, all you have to do is download all of the files from your current host and upload them to the new host, then change the nameservers of your domain.

I am not much of a technical person, so I have a few questions.

1) Where exactly are you supposed to upload the files on the new host? Since my website directory will not yet be available.. am I supposed to just create a dummy account?

2) My domain is hosted on Awardspace. I’d also like to move it to GoDaddy or some other service to keep it separate from my hosting plan, but I’m not sure how to do this.
